Quick and Easy Dinner- Stir Fry
Do you need a quick and easy dinner for those busy weeknights? This stir-fry recipe is so easy even the worst cooks can make it. Best of all, it can be ready to eat in about 10 minutes.
One of my biggest challenges since the birth of my son has been cooking. I really enjoy cooking, however, my now toddler rarely gives me much time to do so. Having a few time saving and super easy meals in my arsenal are a must. This quick and easy dinner has zero prep time, and minimal dish dirtying, which also saves time after. Best of all this stir-fry is under 500 calories making a great alternative to fast food.
Ingredients
The ingredients are minimal making it a perfect budget-friendly dinner.
- 1 pound of lean ground turkey– I used Jennie-O.
- Veggie Stir-Fry Mix– These can be found in most grocery stores in the produce section with the salad mixes/kits. The one I used this time actually came with a sauce. Another option is cutting up vegetables earlier in the week/day as part of a weekly meal prep. Cut up carrots, cabbage, onion, broccoli and brussel sprouts make a great stir fry combo.
- Ramen– I purchased this package of rice ramen at Costco. The brand is Lotus Foods and it is a bulk pack of brown rice and millet ramen noodles.
- Sauce to taste– I typically use a teriyaki sauce and my taste is about 2 tablespoons.
Quick and Easy Stir-Fry Directions
- Start a pot of boiling water per instructions on noodle package of your choice
- In a large skillet start browning the ground turkey
- Add noodles/ramen to boiling water and cook per instructions
- While the ramen is boiling, dump in the stir-fry vegetables into the skillet with the turkey
- Stir in sauce with turkey and veggies and cook for an additional 5 minutes
- Drain ramen/noodles
- Portion out ramen/noodles on plates and top with turkey/veggies stir-fry
- Serve
There you have it, a super quick and easy dinner for four that can be made in about 10 minutes. I personally like to keep the ingredients simple light on the sauce. What is great about the Lotus Foods Millet and Brown Rice Ramen is that it is so versatile and can be used in different ways. This recipe is also very easy to customize and put your own spin on it.
